These Baked Sweet Potato Fries are crispy perfection
I’m not exaggerating when I say I could eat a whole pan of these. (In fact, when I shot the photos for this post, I literally ate the whole pan of sweet potato fries in that photo up there. Truth.)
I love their crisp little edges, the slightly chewy texture, and the sweetness from the potatoes paired with my favorite seasoning for sweet potato fries which has a Tex-Mex feel.
They go well with a lot of things we eat! The kids like them, too. Especially alongside some Sloppy Joes. My favorite thing to do is make a chili-fry situation with sweet potato fries and sloppy Joe meat.
Trust me on this. It’s spectacular.
Why you’ll love these Oven Baked Sweet Potato Fries
First, there are no fussy steps like soaking the fries in water or tossing them around in some kind of starch. (Who wants an extra dirty bowl to clean?)
I’ll share some tips on how to slice and roast them so they’re mostly crispy. I say “mostly” because while these are pretty crispy for a sweet potato fry, they’re not going be quite as crisp as regular oven fries. That’s just the nature of things.
But I promise you they won’t all be floppy or mushy.
What you’ll need for Oven Sweet Potato Fries
- Sweet Potatoes – Whether you call them sweet potatoes or yams, here’s what you need. You can use orange or white ones. Look for short potatoes that are mostly straight without being curved. They’ll be easier to cut into fries.
- High-heat safe oil – I like using avocado oil. You can also use coconut oil or another type of oil that has a high smoke point. (Btw, clarified butter makes excellent sweet potato fries. Just sayin’.)
- Seasoning – This is up to you, but my favorite seasoning for sweet potato fries is equal parts granulated garlic, chili powder, cumin, and salt.
How to cook Sweet Potato Fries in the Oven
- Peel and slice sweet potatoes into thin fries.
- Place them on a parchment lined baking sheet and toss with oil and seasoning.
- Roast until the fries are medium brown, flipping them around halfway through roasting.
- Serve!
How long to bake Sweet Potato Fries
I bake my sweet potato fries for 20-25 minutes at 425F. The cooking time will depend on your oven and how thin you slice your fries. You’ll want them medium brown with some of the tips very dark.
Tips for making Sweet Potato Oven Fries
- Choose short, straight sweet potatoes. They’ll be easier to slice into fries if they aren’t too long or curved.
- Slice them thin and roughly the same size. If you can get them thin they’ll have a higher chance of being crispy.
- Make sure to use enough oil.
- Don’t crowd the pan. If your pan is full, divide it into two pans and rotate the pans in the oven half-way through roasting. I promise it’s worth it. If you have too many fries on those pans you’ll end up with soggy, sweet potato fries of sadness.
- Roast them on a low oven rack. It’ll help brown them up faster. Flip them halfway through roasting, too.
- Let them cool on the baking sheet before transferring to a serving plate. If you pile them up on a plate right away, they’ll start steaming. And steam = mush. Don’t do it. Better yet, serve them directly from the baking sheet.
Do I need to peel the sweet potatoes?
Nope. You can leave the peels on if you like. I prefer them peeled (and so does my family) which is why I do it.
How to cut Sweet Potato Fries
- First, make sure your knife is really sharp. Seriously. Cutting sweet potatoes is a giant pain in the rear if your knife isn’t sharp. And I’ll be harder to get them thin and evenly sliced.
- Slice the sweet potato into thin planks — no more than 1/2 inch thick.
- Divide the planks into two stacks with the rounded portion on top. Slice each stack into thin fries.
- If you have any thicker fries, slice them in half.
How to season Sweet Potato Fries
Drizzle the oil and sprinkle the seasoning right on the fries. Toss them around to coat them, then spread them out evenly on a parchment lined pan.
You don’t have to use parchment, though. If you use enough oil, you can go without.

Oven Sweet Potato Fries

Ingredients
- 10 ounces sweet potatoes (about 1 medium potato)
- 2 Tablespoons high heat cooking oil
- 1 teaspoon seasoning (see note)
Instructions
- Preheat oven to 425F. Line a large rimmed baking sheet with parchment paper or coat with non-stick seasoning.
- Prepare your sweet potatoes by peeling them (or not!) and slicing them into thin planks -- no more than 1/2 inch wide.
- Separate the plants into two piles with the rounded pieces on top of each. Slice each pile into thin fries. Try to get them all roughly the same size.
- Place the fries on the baking sheet, drizzle with oil, and sprinkle the seasoning on top. Toss them with your hands and then spread them out evenly.
- Roast on a lower oven rack for 20-25 minutes until they're covered in medium brown spots and have crispy tips. Flip them around halfway through roasting.
- Let them cool on the baking sheet for 5-10 minutes before serving. (This is important. Don't immediately dump them onto a serving platter or you'll end up with mushy fries.)
Notes
- My favorite seasoning for sweet potato fries is all I use for these. It's the best.
- Make sure your knife is sharp or you'll be hating life. Cutting sweet potatoes with a dull kitchen knife is the worst!
- This recipe is for roughly one sweet potato. Feel free to double this recipe with more sweet potatoes, but use two pans and rotate them halfway through roasting.
