Healthy Meal Plan #52

These healthy meal plans are for six dinner recipes and a dessert thrown in for fun! All of these recipes are (mostly) paleo friendly, seasonal, and most can be easily adapted to be Keto/Low-Carb or Whole30 friendly.

Hey Friend!

I’ve got good news and bad news.

The good news is that we’ve got another batch of tasty recipes for you to transition you to fall!

Also, this is the 52nd meal plan which means Julia and I have created a WHOLE YEAR’S worth of weekly plans for you! They’re all free for you to use with shopping lists attached and tips for each recipe. You can find all of them in the link in my top menu bar.

The bad news?

This is the last meal plan that Julia and I are putting together. It’s been a fun run and we’ve really enjoyed doing these, but we both decided we need to put our efforts elsewhere.

Meanwhile you’ve got an entire year’s worth of meal plans!

Sunday

OVEN ROASTED CHICKEN SHAWARMA — My version of chicken shawarma has all the shawarma flavors you love in sheet pan form! No spit roasting needed.

Special Diet Note: Recipe is gluten and grain free depending on how you serve it.

Prep Ahead: Vegetables and chicken can be chopped a couple of days in advance. You’ll also need to throw together some easy Shawarma Seasoning if you don’t already have some.

Substitutions: Use whatever quick cooking vegetables you prefer. Serve this over a bed of salad greens or as part of a grain bowl. There is a quick recipe for tahini yogurt sauce that’s fabulous with this or you can use store bought hummus or tzatziki.

Monday

FALL HARVEST SALAD — This fresh and flavorful Fall Harvest Salad with Chicken and Sweet Potato includes delicious goodies like apples, dried cranberries, pecans, feta cheese, sunflower seeds, and a delightful lemon parsley dressing.

Special Diet Note: Recipe is gluten-free and can be made paleo friendly.

Prep Ahead: Make the dressing up to 5 days ahead of time.

Substitutions: Omit the cheese or use a raw cheese for paleo. Make sure the dried cranberries aren’t sugar-sweetened for paleo. Add in any of your favorite vegetables.

Tuesday

CLAM CHOWDER — This version of clam chowder features a sprinkle of bacon on top and you can easily make it gluten and dairy free! 

Special Diet Note: Recipe is gluten and dairy free. 

Prep Ahead: No need to prep ahead.

Substitutions: If you’re avoiding white potatoes, you can swap them out for small cauliflower florets or diced parsnips.

Wednesday

MEDITERRANEAN CHICKEN AND HUMMUS BOWL – You’ll love this bowl with tender garlic herb marinated chicken, cucumber tomato salad, creamy hummus, and feta cheese. 

Special Diet Note: Recipe is gluten-free and can be made lower carb or paleo friendly.

Prep Ahead: Make the chicken and rice up to 4 days in advance. 

Substitutions: Swap out the rice for cauliflower rice for lower carb. Use rotisserie chicken to save time.

Thursday

ROASTED BUTTERNUT SQUASH SOUP — This roasted butternut squash soup is super easy and has hits of chipotle and lime that you’ll LOVE.

Special Diet Note: Recipe is paleo friendly.

Prep Ahead: If you’re using a whole squash, you can roast it ahead of time. Otherwise, early prep isn’t needed.

Substitutions: Omit the chipotles in adobo if you’d rather not have that smoky/spicy flavor. 

Friday

GARLIC SESAME CHICKEN BOWLS — These bowls feature sweet and savory sticky chicken, brown rice, avocado, and pickled vegetables 

Special Diet Note: Recipe is gluten-free and can be made low-carb/paleo.

Prep Ahead: No need to prep ahead.

Substitutions: Use cauliflower rice instead of brown rice for lower carb/paleo. You can also mix in any of your favorite cooked or raw vegetables.

Dessert

GLUTEN FREE PUMPKIN CHOCOLATE CHIP COOKIES — I’ve got an easy gluten free pumpkin cookie recipe for you that is not only delicious, but will satisfy those who don’t need to eat gluten free! 

Special Diet Note: Recipe is gluten free.

Prep Ahead: No need to prep ahead.

Substitutions: I highly recommend using Namaste gluten free flour. You can find it in some stores in the Western US or on Amazon. It’s my favorite GF flour blend for cookies.
